Broiled Tomatoes & Cheese

I had found a recipe for a hot corn dip that I really wanted to try, and it became the basis of our menu planning.  As there were only my husband and me eating snacks this past Sunday, we needed to make only two or three dishes.  With a chip and dip dish starting our list, we decided to make a meat appetizer for our second item.  To finish the list my husband suggested making some sort of veggie dish.

Tomatoes still are in season in New Hampshire, so it seemed the perfect time to use these in a recipe.  To keep the recipe simple both for cooking and eating, we chose to use sliced tomatoes.  Top the slices with a flavorful cheese and seasoning, and our third dish would be complete.

With this recipe being so simple, there really only is one important item to consider: the quality of ingredients you use.  The tomatoes in this recipe should be freshly picked to deliver the best flavor.  If tomatoes aren’t in season where you live, I would not make this recipe until they are.  The cheese you choose should have a flavor that compliments the tomato without overpowering it and should melt well.

Broiled Tomatoes & Cheese

Ingredients
  1. 1 tomato, sliced
  2. 1/4 lb. smoked mozzarella, sliced*
  3. salt & pepper
Instructions
  1. Preheat broiler with rack approximately 4 inches from element.
  2. Place tomato slices on a rimmed baking tray.
  3. Top each with a slice or two of mozzarella.
  4. Place in oven, for 3-4 minutes or until cheese melts.(Watch carefully to avoid burning the cheese.)
Notes
  1. *Another type of cheese can be used, if desired.
